Add Starter Tea: Pour cooled tea into a clean glass jar → add starter tea. Add SCOBY: Gently place SCOBY on top. Cover & Ferment: Cover jar with breathable cloth → let sit 7–14 days at room temp, away from direct sunlight. Taste Test: Start tasting at day 7. When tangy and slightly sweet → ready. Bottle & Second Fermentation (Optional): Add flavors (ginger, fruit) → bottle → ferment 2–5 days for fizz. Refrigerate & Enjoy: Stop fermentation by refrigerating. 3.Safety Tips: Always use clean utensils and jars to prevent mold. If you see fuzzy mold (green/black) → discard the batch.
